- Butterbean and celeriac veloute with smoked ham hock, hazelnut and spinach pesto, and croutons
- Pearl barley and watercress risotto with asparagus and pecorino micro herbs and beetroot dressing
- Steamed rock turbot with crayfish mousse, shellfish mariniere, pomme cocotte, carrots, broccoli and caviar sauce
